Living on a tropical island, summer means that you can feast on tasty fruits almost everyday. And no better way to enjoy it than something icy cold on a very hot day :)
Pineapple and mangoes are definitely my favourites.
So here is my Fresh and Creamy Pineapple smoothie.
Makes 2 serves
- 2 slices of pineapple/ 1/2 pineapple (can be frozen or fresh)
- 300mL of coconut milk (light or full)
- optional: add a few peanuts or a tiny spoon of peanut butter
Put all ingredients together in the blender, mix for less than 1 minute and there you have a fresh drink to fix your little afternoon craving, or just as a nice drink to enjoy. Yes it's almost a pinacolada minus the excess sugar. Just use the natural sweetness from the pineapple :)
You can also make it into a green smoothie by adding a handful of frozen spinach to the mix.
