It is finally summer, and this means it's time for very tasty pineapple! If you've got too many pineapples at home, why not try make some jam.
This is a super easy recipe with only just a few ingredients. A much better alternative to regular store-bought jam, enjoy!
Ingredients:
1 medium pineapple, preferably ripe
2-3 tbsp of chia seeds soaked in 1-2 tb of water
1 tbsp of tapioca flour
optional: honey
Method:
Let the chia seed soak in some water while you chop the pineapple into rough pieces
Puree pineapple and pour into a pan. Let it cook over medium heat for approximately 10 minutes, allowing the water to evaporate.
Add in the chia seeds and the tapioca flour and let it cook for another 10-15 minutes over low heat.
Let the jam cool down, then pour mixture in an airtight jar.
Keep the jam in your fridge for 2-3 weeks and, make sure to use a clean spoon each time you eat some jam.
Tip: If the pineapple isn't sweet enough, you can add in some honey while the mixture is cooking.
