Okra Fries (Lalo) and Potato Wedges (Baked)
Okra isn't the easiest vegetable to like. I spent 26 years disliking and avoiding it as I found it to be too slimy.
But I have the solution for you if like me you hate the slimy texture of lady fingers but would like to include them as they have many health benefits. Oven-baked okra fries that are just like tasty fries :)
You may even get your kid to like it, how does that sound?
In this recipe, we're making oven baked okra fries and potato wedges for the days you don't feel like spending much time in the kitchen: A quick and tasty baked dish to add to any protein of your choice.

Ingredients:
- Lady fingers - about 2 handful for 2 people
- 2-3 medium potatoes
- olive oil
- salt
- pepper
- herbs and spices of your choice. I went with a simple one and used paprika only.
Method:
Preheat oven on 200 degrees Celsius.
Soak potatoes in water for 5 minutes using a big bowl of fresh water.
Drain water and use a brush and dish brush, clean the potato skin to remove any dirt.
